Eleven65 to Open in Time for Mother's Day

Eleven65, the new upscale restaurant announced for O'Fallon's Highway K and Interstate 64 corridor, will open in time for Mother's Day. 

That's according to Feast St. Louis, which also reported that the restaurant will feature a seasonally rotating menu that leans heavily on fresh ingredients that are available at the time. 

Eleven65 will operate out of the vacant building that was the former home of J. Buck's Restaurant, located between the Staybridge Suites and Holiday Inn Express.

J. Buck's closed its O'Fallon location in 2009.

Hal Sparks is also working to build up an impressive wine collection and the expertise to back it up. At 21 years of age, he is one of the youngest sommeliers in the nation to achieve level one certification in the Course of Master Sommeliers and is working toward becoming the youngest Master Sommelier in history by the time he hits 25.

He estimates there's room for more than 400 bottles on Eleven65's premises. Future events at the restaurant will highlight wines and liquors in the in-house collection. “I'd like to put together some five-course tasting menus, also whiskey flights or bourbon flights. We're working on how that will take shape. We really want to get out there and do something different.”

David Sparks, owner of the family-operated restaurant, said the restaurant will serve “new American cuisine,” with a local twist on the menu.

“We’re going to rotate out the seasons and try to keep it as organic as possible by utilizing the public markets in the area,” he said.

An outdoor patio is also planned for the restaurant.
