Family-Owned Produce Stand Has Country Charm

Jimmy, Mary and Jamie Cummings own and operate Lil' Shack.

Traveling down West Meyer Road you can’t miss the big American flag mounted on the barn-red produce stand welcoming passers by.  In their second season, the Cummings’ family own and operate Lil’ Shack, brimming with countless varieties of homegrown fruit and vegetables.  The business is booming compared to last year. “We had never done anything like this before,” the Cummings said. A concrete foreman for J. H. Berra, Jimmy ran a paving crew for 28 years. Mary worked in food service at the Wentzville School District. Now retired, they needed an outlet for their energy. Nutritious Bites--The month of March is just a touch past half way so working on “Get Your Plate in Shape” is hopefully moving forward nicely. If you need a refresher, or if you are still struggling finding the right balance, let’s take another look. Incorporate more fruit and vegetables into your diet.

January usually brings a resolution to lose weight, eat healthier or work out more, and often by this stage of the month the resolution has fallen by the wayside. If your goal was to eat healthier, there are some simple tips to make this happen. This week, I attended a workshop at the Culinary Institute of America. The goal of the workshop was to boost the inclusion of vegetables, whole grains and beans into the American diet. One of the main concepts of the workshop was incorporating beans, veggies and whole grains not just plopping them on a plate and hoping that your family will eat them. A few of the ideas for inclusion included using beans in place of some of the meat in chili, making oatmeal by adding a variety of other grains and …

The two basics of healthy eating are knowing which foods are the better choices and then knowing portion sizes. With the variety of portions served in restaurants, in your home and in packaged foods, it can be very confusing to know what is the right portion size. Let’s make the portion size a bit clearer. First, a portion is the reference amount for a food within each of the five food groups in the dietary guidelines or on MyPlate. O'Fallon Target Stores Set for Makeovers

New PFresh concept will bring produce, bakery and meat items to locations on highways K and N.

O’Fallon residents will soon see changes popping up at their local Target department stores. The Target locations on highways N and K are the latest stores to be scheduled for a changeover that will see the retailer offering fresh fruit and vegetables and an expanded variety of fresh packaged meats and bakery items. Known as PFresh, it’s a concept the chain is introducing to stores around the nation. Pioneered by the retailer in 2008, the idea involves a more extensive grocery selection that features exclusive Target brands. “Target’s new expanded food layout was created in response to research and feedback from guests who requested more fresh food selection in the convenience of their local Target store,” states a news release from the …
